Cinnamon Christmas Bites

Baking: makes approx. 22 Bites
INGREDIENTS
- 100g sugar
- 75g eggs
- 100g milk, lukewarm
- 200g, plain white flour, sieved
- 6g baking powder
- 50g butter
- Zest of ¼ lemon
- Zest of ½ orange
- ½ tsp powdered cinnamon
- 22 baking cases for approx 15 g of contents
METHOD
Lemon Glaze
- Mix 1 dessert spoon lemon juice with icing sugar to give a light liquid glaze
The Bites
- Mix the flour with baking powder
- Melt the butter
- Pre-heat oven to 180°C
- Mix the sugar and egg together well, dissolve the powdered cinnamon in the lukewarm milk and stir into the egg mixture.
- Add the sieved flour and baking powder and carefully stir in the cinnamon milk and melted butter into it.
- Divide between the moulds and bake for approx. 12-14 minutes in the oven at 180°C.
- Allow the Christmas bites to cool and then coat with the lemon glaze.
- Add your own choice of decorations.
Enjoy the Christmas bites on the day they are made.
