Cinnamon Christmas Bites

Baking: makes approx. 22 Bites

INGREDIENTS 

  • 100g sugar
  • 75g eggs
  • 100g milk, lukewarm
  • 200g, plain white flour, sieved
  • 6g baking powder
  • 50g butter
  • Zest of ¼ lemon
  • Zest of ½ orange
  • ½ tsp powdered cinnamon
  • 22 baking cases for approx 15 g of contents    

METHOD

Lemon Glaze

  • Mix 1 dessert spoon lemon juice with icing sugar to give a light liquid glaze

The Bites

  • Mix the flour with baking powder
  • Melt the butter 
  • Pre-heat oven to 180°C 
  • Mix the sugar and egg together well, dissolve the powdered cinnamon in the lukewarm milk and stir into the egg mixture.
  • Add the sieved flour and baking powder and carefully stir in the cinnamon milk and melted butter into it. 
  • Divide between the moulds and bake for approx. 12-14 minutes in the oven at 180°C.
  • Allow the Christmas bites to cool and then coat with the lemon glaze. 
  • Add your own choice of decorations.
